Extra Crispy Oven Baked French Fries

Prep Time: 45 minutes • Cook time: 1 hour

Serves: 2-4

3 medium russet potatoes
(russets are the best for crispiness)

1-2 TBSP olive oil

2 TBSP grated Parmesan (optional)

2 TBSP seasoned salt

1 TSP chili powder

1 TSP dried basil

1/8 TSP cumin

1/8 TSP black pepper

1. Preheat the oven to 400 degrees.

2. Combine seasoning ingredients in a small bowl; set aside.

3. Wash and peel the potatoes, cut into thin slices about 1/4 inch wide.

4. Add the fries to a large bowl and cover with cold water, soak for at least 30 minutes

5. Drain, rinse and lay the fries on a paper towel to dry. Blot with paper towel to absorb excess moisture.

6. Line baking sheet with parchment paper and spray with non-stick spray. In DRY bowl, add potatoes and 1-2 TBSP of oil and 1/2 – 1 TBSP of the seasoning mixture. Toss to mix.

7. Line baking sheet with the fries, don’t overlap or the fries won’t cook properly. Bake approx. 30 minutes, flip once or twice after 15 minutes of cooking. Remove fries from oven and turn up to 425 degrees. Return the fries to the oven, cook until golden brown and the ends are a little burnt.

8. Sprinkle the fries with the remaining seasoning mix and Parmesan cheese (optional). Serve immediately.

Serve with fry sauce, ketchup or ranch dressing & enjoy!
