1/2 cup olive oil
1/3 cup sugar
1/3 cup white wine vinegar
1 tsp. chili powder
1 tsp. salt
1 pound Roma tomatoes, seeded and diced
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can corn, drained
1/2 cup green bell pepper, diced
1/2 cup yellow or orange bell pepper, diced
1 cup chopped cilantro
1. In a large bowl, whisk together the olive
oil, sugar, white wine vinegar, chili
powder, and salt.
2. Add tomatoes, beans, corn, onion, and
bell peppers. Stir to combine.
3. Stir in cilantro. Cover and chill for at least
one hour or overnight to blend flavors
